Forget
ketchup! On my first trip to the medieval city of Bruges in Belgium I had fries
with mayonnaise and became a convert. If you haven’t tried it, it’s time for a
change.
Since
then I have expanded my horizons and made mayonnaise-based sauces for burgers,
onion rings, fried fish, crab cakes and sandwiches. Below are some of my
favorite recipes.
Comeback Sauce
Different variations of the
“comeback sauce” are popular in the South. Below is one version. This sauce got
its name because it is so good that your will come back for more.
Ingredients
1 cup mayonnaise
¼ cup Sriracha sauce
2 tablespoons ketchup
1 tablespoon lemon
juice
1 teaspoon smoked paprika
2 teaspoons Worcestershire
sauce
1 teaspoon hot sauce
½ teaspoon kosher salt
½ teaspoon garlic
powder
½ teaspoon onion powder
½ teaspoon dry mustard
¼ teaspoon freshly
ground black pepper
Directions
Stir together mayonnaise,
chili sauce, ketchup, lemon juice, paprika, Worcestershire sauce, hot sauce,
salt, garlic powder, onion powder, dry mustard, and pepper. Cover and chill 30
minutes before serving. Refrigerate 1 week.
Outback Bloomin’ Onion Sauce
A great sauce for a Bloomin’ onion or onion
rings as well as for French fries.
Ingredients
½ cup mayonnaise
2 TBS creamy
horseradish
1 TBS ketchup
⅓ teaspoon paprika
⅓ teaspoon cayenne
pepper
⅛ teaspoon dried
oregano
¼ teaspoon salt
1 pinch ground
black pepper
Instructions
In a bowl, combine all
ingredients and mix well. Cover and put in the fridge for at least 3 hours to
let flavors meld.
Cajun
Mayonnaise Dipping Sauce
Ingredients
1/2 cup mayonnaise
1 tsp lemon juice
1/4 tsp cayenne pepper
1/8 tsp garlic powder
1/8 tsp onion powder
1/8 tsp pepper
1/8 tsp paprika
1/8 tsp dried thyme
1/8 tsp turmeric
1/8 tsp dried oregano
1/8 tsp salt
Whisk
ingredients to combine. Refrigerate for 30 minutes.
Remoulade Sauce
Remoulade sauce is often
served with seafood dishes, such as crab cakes and beer-battered fried fish.
You can also use it as a sauce for sandwiches and with meats.
Ingredients
1/2 cup plus 2 tablespoons
mayonnaise
2 tablespoons Dijon
mustard
¾ teaspoons paprika
½ teaspoon Creole seasoning
1 teaspoon prepared horseradish
2 tablespoons
dill pickle relish
½ tablespoon chopped capers
½ teaspoon hot
sauce
¼ teaspoon garlic powder
Mix the ingredients in a medium-size bowl. Taste for
seasoning and adjust as needed.
Chill the remoulade. The remoulade is better if left for a few hours to let
the flavors meld. Keep refrigerated.
Mix together the following ingredients:
Standard Burger Sauce
Ingredients
½ cup mayonnaise
2 tbsp. Dijon mustard
2 tbsp. zesty Texas-style BBQ sauce
2 tbsp. A1 Steak Sauce
1 tsp. BBQ Rub
2 tbsp. of chopped salad olives with pimentos
Chill before serving.
McDonalds Secret Big Mac Sauce
This sauce is my copycat version of McDonalds secret Big Mac
sauce. Mix together the following ingredients:
Ingredients
½ cup
mayonnaise
1
tablespoon yellow or Dijon mustard
2 tablespoons
French salad dressing
2
tablespoons of pickle relish (you can use a 50:50 mix of dill and sweet pickle
relish)
1
tablespoon apple cider vinegar
1
teaspoon garlic powder
1
teaspoon onion powder
1
teaspoon paprika
1/8
teaspoon MSG
1/8 teaspoon
cayenne pepper
1/2
teaspoon of salt
Mix the
ingredients. Taste teste the mixture and adjust as needed. Chill before using.
Tartar Sauce
Ingredients
½
cup mayonnaise
2
tablespoons dill pickle relish
1
tablespoon capers, finely chopped
½
tablespoon freshly squeeze lemon juice
1
teaspoon Dijon mustard
¼
teaspoon onion powder
¼
teaspoon garlic powder
1/8
teaspoon salt
1/8
teaspoon black pepper
1/8
teaspoon Worcestershire sauce
Whisk
the ingredients together. Chill before using.
CHICK-FIL-A SAUCE
While this copycat Chick-Fil-A
sauce is a popular addition to a fried chicken sandwich, you can also use it
for dipping French fries. Kids should love this sauce for its sweetness.
Ingredients
1/2 cup Mayonnaise
2 tsp Dijon Mustard
2 tsp Yellow Mustard
2 tsp BBQ Sauce (Sweet
Hickory tastes the best)
2 Tbsp Honey
1/2 tsp Garlic Powder
1/2 tsp Paprika
1 tsp Lemon Juice
INSTRUCTIONS
Mix: Whisk together
mayonnaise, honey, mustards, lemon juice and BBQ sauce.
Chill: cover and place in
refrigerator for at least 30 minutes prior to using.
Russian Salad Dressing
Russian and Thousand Island salad dressings are very similar. You can use them on burgers and on Ruben sandwiches.
Ingredients
½ cup mayonnaise
¼ cup sweet pickle relish
3 tablespoons chili sauce
1 teaspoon hot sauce
1 tablespoon fresh lemon juice
1 tablespoon prepared horseradish
1 teaspoon onion powder
¼ teaspoon smoked paprika
1 teaspoon Worcestershire sauce
1/8 teaspoon Kosher salt
Whisk the mayonnaise and other ingredients together. Allow
to chill for several before serving.
Thousand Island Dressing
Ingredients:
½ cup mayonnaise
1 tablespoon white vinegar
2 teaspoons sugar
2 tablespoons chili sauce
2 teaspoons sweet pickle relish
1 teaspoon onion powder
1/8 teaspoon salt
Dash black pepper
Mix the sugar and white distilled vinegar together. Allow
the sugar to dissolve. Add the mayonnaise and other ingredients. Whisk to
thoroughly combine the ingredients. Chill for several hours before using.
